I've been on a quest to make the best and easiest biscuit recipe. Specifically, to serve with my sausage gravy for breakfast. This recipe is what I finally came up with. The trick? Grate (like a cheese grater) the very cold butter into the flour and use sour cream instead of buttermilk. It's really amazing and the picture is true to the flakiness.

8 - 3 inch biscuits or 16 - 2 inch biscuits
Ingredients
- 2 Cups all purpose or bread flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 Tablespoon sugar
- 1 egg
- 1 Cup sour cream
- 1/4 butter, super cold
*1 egg and 1 Tablespoon water for egg wash
Procedure
- Preheat oven to 400º F
- Cover sheet pan with parchment paper
- Add all dry ingredients to a large mixing bowl - lightly mix.
- Add egg and sour cream.
- Grate super cold butter directly into the mix.
- Stir until thoroughly incorporated and the dough looks crumbled but ready to stick together. Turn out onto a surface and knead until the dough becomes smooth. This should take about 5-10 folds. Do not over do it!
- Roll into a big ball and using a rolling pin and a little flour for dusting, roll dough to about 1 to 1 1/2 inch thick. Use 2-3 inch cutter and cut biscuits.
- Place biscuits on parchment lined baking sheet. Do not let them touch. Brush a little egg wash on each biscuit.
- Cook about 12-15 minutes, depending on the size of your biscuit. They should look flakey and slightly browned on top.
