Tomate aux Crevettes (Tomatoes Stuffed with Shrimp)

This is such an easy Belgian Shrimp Recipe. It's so good, refreshing, and delicious on a wonderful spring or summer day. Imagine sitting outside on a Belgian bistro terrace with a nice glass of white wine.

Makes enough for 4 large tomatoes

Ingredients

  • 4 large big boy tomatoes
  • 1 lb cooked tine North Sea Shrimp (if you can't find them, any cooked shrimp will do - just chop them up small)
  • 1/3 cup of mayonnaise
  • 1 tablespoon lemon
  • 2 Tablespoons fresh parsley, chopped
  • salt and pepper to taste

Procedure

  • Dig out the meat of the tomatoes to make a nice bowl to put the shrimp salad in.
  • Mix all the other ingredients together - let rest for about 15-20 minutes in fridge to marinate.
  • Stuff the tomatoes and garnish with parsley. Serve with some slices of bread and some salad as you wish.
