I was diagnosed with diabetes a few years ago. Low and behold I now crave sweets, where I never did before. With that said, I have to find yummy desserts (especially chocolate) that don't have any sugar.
Ingredients for pie shell or you can buy one pre-made
- 1 1/2 Cups ground walnuts (I like them toasted and then cooled before grind them)
- 3 Tablespoons butter
- 2 Tablespoons Sucralose sweetner
Procedure for pie shell
- Preheat oven to 325º F.
- Mix all the ingredients in a bowl until thoroughly incorporated.
- Press the mixture firmly into the bottom and sides of a pie pan.
- Cook for 10 minutes and let cool completely.
Ingredients for filling
- 3 Cups 1% cold milk
- 2 pkg 6 oz sugar free instant chocolate pudding
- 1 tsp vanilla extract
- 1 tsp instant French or Dark Roast Coffee
- 1 Cup sugar free whipped topping
Procedure for filling
- In a large bowl, combine the milk pudding mixes, vanilla, and coffee.
- With a hand mixer on low, beat the mix for about 1 minute. Then turn it to medium and mix for another 2 minutes or until the mix is thick and fluffy.
- Fold in the whipped topping until thoroughly incorporated.
- Spoon the filling into the prepared crust. Cover and refrigerate for at least 3 hours to make it stiff.
- Serve with more whipped topping if you like.
