Sugar Free Chocolate Mousse Pie

I was diagnosed with diabetes a few years ago. Low and behold I now crave sweets, where I never did before. With that said, I have to find yummy desserts (especially chocolate) that don't have any sugar.

Ingredients for pie shell or you can buy one pre-made

  • 1 1/2 Cups ground walnuts (I like them toasted and then cooled before grind them)
  • 3 Tablespoons butter
  • 2 Tablespoons Sucralose sweetner

Procedure for pie shell

  • Preheat oven to 325º F.
  • Mix all the ingredients in a bowl until thoroughly incorporated.
  • Press the mixture firmly into the bottom and sides of a pie pan.
  • Cook for 10 minutes and let cool completely.

Ingredients for filling

  • 3 Cups 1% cold milk
  • 2 pkg 6 oz sugar free instant chocolate pudding
  • 1 tsp vanilla extract
  • 1 tsp instant French or Dark Roast Coffee
  • 1 Cup sugar free whipped topping

Procedure for filling

  • In a large bowl, combine the milk pudding mixes, vanilla, and coffee. 
  • With a hand mixer on low, beat the mix for about 1 minute. Then turn it to medium and mix for another 2 minutes or until the mix is thick and fluffy.
  • Fold in the whipped topping until thoroughly incorporated. 
  • Spoon the filling into the prepared crust. Cover and refrigerate for at least 3 hours to make it stiff. 
  • Serve with more whipped topping if you like.
