Simple Ground Turkey Meatballs

I was told to cut back on my beef intake. It sucks getting old! Therefore, I adapted this recipe specifically for ground turkey. In actuality, ground turkey makes a much lighter and less dense meatball. However, I haven't forgotten the beef eaters, I have notes on the bottom of the recipe card if you would like to make ground beef meatballs instead.

Makes approximately 24 meatballs

Ingredients:

  • 1 1/2 lb ground turkey
  • 1 teaspoon crushed dried basil
  • 1 teaspoon dried oregano
  • 1 cloves garlic, crushed
  • 1/2 Cup fresh bread crumbs
  • 1/4 Cup parmesan, grated fine
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Tablespoons olive oil

Procedure:

  • This is so easy, it's ridiculous. Preheat oven to 425º F.
  • Mix all the ingredients together (by hand is best) in a large bowl.
  • Form medium size meatballs. I use a medium ice cream scoop to get uniform sizes. Do not over roll them or they will cook up tough. 
  • Drop them onto a parchment lined sheet pan about an inch apart.
  • Cook for 10-15 minutes until browned and cooked through.
  • Yep, that's it!

A few notes:

  • Ground your own breadcrumbs with fresh bread. Dried breadcrumbs from the store just don't work for this. 
  • You can easily substitute beef. Don't add the 2 Tablespoons of olive oil. Beef typically doesn't require the extra fat/oil. You'll just end up with a greasy mess.
  • Swedish Meatballs: substitute chopped parsley for the dried basil and dried thyme for the dried oregano.
