What in the world does that title mean? Simple...cheese and pepper. This is such a easy recipe, I can't believe it. Anyone can make this super minimalist recipe as a side or like I serve it up - as a big old bowl of pasta for a main dish. It's full of carbs, but hey, you only live once. Just don't over do it. I have diabetes and I plan my day around the carbs I'm going to eat. I will give credit where credit is due. I got this from Food & Wine. The only thing I added was the chicken base to the pasta water to give a little more flavor. It's just perfect in every way.

Ingredients
- 3/4 pound linguine or spaghetti (any long pasta will due - I used angel hair for this picture)
- 1-2 Tablespoons chicken or vegetable base
- 1 Cup grated Pecorino or Parmesan cheese (must be freshly grated - please don't use that dried stuff)
- 2 Tablespoons unsalted butter
- 2 teaspoons coarsely ground pepper
- Salt to taste
Procedure
- Bring a pot of water to a boil and add the base.
- Add the chosen pasta and cook until "al dente" or just done. According to package directions.
- Drain the pasta and reserve 2/3 of the pasta water.
- Return the pasta to the pot. Add the cheese, butter, pepper and pasta water. Season with salt as needed.
- Serve immediately with a sprinkle of cheese on top for garnish.
