This easy recipe for Lemon Her Roasted Chicken Thighs is so dang good. You can use chicken legs and or a whole cut up chicken, but I like using thighs because they have just the right amount of meat vs fat and taste so much better for braising. All the pieces cook evenly.
Ingredients
- 1/4 Cup Extra Virgin Olive Oil
- 1/3 Cup white wine (I use Chardonnay)
- 1/3 Cup water
- 1/4 Cup lemon juice
- 1 Tablespoon crushed garlic
- 1 Tablespoon fresh oregano or 1/2 Tablespoon dry
- 1 Tablespoon fresh Thyme or 1/2 Tablespoon dry
- 1 Tablespoon Dijon Mustard
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 4-6 chicken thighs, depending on size
Procedure
- Make the marinade: mix garlic, oregano, thyme, lemon juice, olive oil, wine, water, mustard, salt and pepper until well combined. Add the chicken thighs to marinate for minimum 2 hours, but no more than 24. The lemon juice will cook the chicken! Turn them every hour or so.
- Preheat oven to 375 degrees F.
- Remove chicken from marinade and place separated in a roasting pan. I find that using a metal pan works best for braising.
- Drizzle the marinade on top of the chicken. Roast for 45 minutes, basting every 10-15 minutes.
- When cooked all the way through and the juices run clear, plate up and drizzle with the sauce from the marinade that should reduce on it's own as the chicken is cooking.
