Homemade Mayonnaise

Yep, it's easy. Way easier than you probably thought. I happened to find some super fresh eggs when I was preparing to make this. With that said, you see that my mayo has that yellow/orangish tint. That's the sure sign that you have a master mayo on your plate.

Ingredients:

  • 1 whole egg
  • 1 egg yolks
  • 1/2 teaspoon dry mustard 
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon white pepper
  • 1-2 teaspoons lemon juice (you can use white wine vinegar as a substitute)
  • 2 Cups oil (1 Cup canola and 1 Cup Olive Oil)
  • More salt, pepper and lemon juice as you want for the flavor. 

Procedure:

  • Drop the eggs in a food processor or blender and give it a punch to mix.
  • Add the mustard, salt, 1 teaspoon of lemon juice and pepper. Start your machine on low.
  • While the machine is running, add the oil in a steady stream. At the end of the 2 Cups of oil you should have a mayo consistency. Add more flavorings with care, until it is the way you like it.
