Herb Crusted Salmon

One of my favorites and of course - it's easy! However, it is not cheap (sometimes you have to splurge). I live in Arizona so good seafood is not prominently available here. I purchase Salmon at Costco from the meat department, as it is the best deal and always fresh, not frozen. Really fresh fish should not smell "fishy." I do trim off the skinny side of the filet which runs vertical on the side. I save that piece for a Salmon lasagna or Salmon burgers...recipes coming soon.

Ingredients:

  • 1/4 Cup Panko (Japanese Breadcrumbs)
  • 1/4 Cup fresh breadcrumbs
  • 1/4 Cup flat leaf parsley, chopped
  • 1/4 Cup green onions (scallions)
  • 1 Tablespoon either dill or tarragon
  • 3 Tablespoons olive oil
  • 3 lb Salmon filet - whole, skin off and small bones removed
  • 1/4 Cup Dijon mustard
  • 1- 2 lemons - sliced and seeds removed
  • Kosher salt and pepper to taste

Procedure:

  • Preheat oven to 475º F. 
  • Toss Panko, fresh breadcrumbs, herbs, green onions and 2 Tablespoon of olive oil in a small bowl.
  • Place Salmon skin side down on a parchment lined baking sheet. Salt and pepper to taste.
  • Spread the Dijon mustard evenly over the filet. Sprinkle with the breadcrumb/herb mixture. Placed lemons on the top and then drizzle the remaining 1 Tablespoon olive oil on the top. 
  • Bake for about 15-20 minutes, depending on how you like it. I like mine just cooked and maybe a little bit of pink inside. The fish should flake pretty easily and be browned on the top and the edges.
