Foccacia (No-Knead)

Yes, it can be done. It's easy and omg, so good! All I can say is Olive Oil...that's the key. If you are going to spend a little extra money on something - don't skimp and get beautiful and flavorful olive oil.

Ingredients:

  • 2 Cups lukewarm water - that would be somewhere around 90º F. Like easy to step in bathwater temp.
  • 4 Cups bread flour (you can use all purpose - but you'll get a little denser result)
  • 2 teaspoons active dry yeast
  • 3 teaspoons Kosher salt
  • 3 teaspoons flavorful Olive Oil
  • 1 teaspoon Sea Salt for the top

Procedure:

  • Measure the water into a large bowl and add the yeast. Stir until well dissolved.
  • Add 2 Cups of flour and the Kosher salt. Stir until a nice and sticky dough is formed. Add the other 2 Cups and continue mixing with a wooden spoon. I like the wooden spoon that is kind of oblong in shape and has one big hole in the middle of it.  When it's done being mixed, the dough should come away from the sides of the bowl but it will still be pretty sticky. 

If you want the bread the same day: cover the bowl with plastic wrap and let rice in a warm place for 1 hour. 

If you have the patience to wait for good things to get better: cover the bowl with plastic wrap and refrigerate over night. You'll get a more flavorful dough from the slower rising action. 

Once your rising action has happened:

  • Preheat oven 475ºF
  • Oil up a 3 inch deep pan that is either rectangle 13 x 18 inch or a round that is 10 inch diameter. 
  • Pour the dough into the pan and using your fingers, gently pat around until flat and pushed all the way to the rim of the pan. Make indentations with your fingers in the dough. The dough should be dimply looking. 
  • Bake 30-35 minutes or until lovely browned on top.
