Flemish Asparagus or Asperges a la Flamande

I lived in beautiful Brussels when I was younger and when asparagus shows up in the local markets on the square - this announces that spring has arrived. This asparagus recipe is so easy, rich, and fresh.

Ingredients

  • 1 lb asparagus - if you can find white that is traditional for this dish
  • 5 hard boiled eggs, peeled and chopped small (see my video on TikTok for a quick hack to do this HERE)
  • 1/3 Cup parsley, chopped
  • 1/2 Cup unsalted butter, melted
  • salt and pepper to taste

Procedures

  • Prep the asparagus by snapping off the end at it's natural break (see video on TikTok HERE). 
  • Bring water to a boil in medium pan that has a tight lid. Add asparagus, put the lid on, turn heat down to simmer and cook asparagus for about 5-10 minutes. 
  • In the meantime in a small bowl mix together the chopped eggs, parsley, melted butter, salt and pepper. 
  • To serve: Drain the asparagus and arrange them all in the same direction on a platter and spoon the egg mixture across the middle of the spears. Garnish with fresh whole parsley leaves. Serve immediately.
