French Vinaigrette Salad Dressing

Everyday French Vinaigrette Salad Dressing

My kids grandmas is French. She was born and raised in the Lorraine region. With that said, one of the things they love the most in the whole wide world is her everyday vinaigrette salad dressing. This recipe was never written down but this is it to a "T." Enjoy and bon appetite!

Ingredients:

  • 1 Tablespoon chopped shallots
  • 1 Tablespoon chopped parsley
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoon Red Wine or Apple Cider Vinegar (alternatively 2 Tablespoons lemon juice)
  • Approximately 1/4 - 1/3 Cup of Extra Virgin Olive Oil
  • Kosher Salt and Pepper to taste

Procedure:

  • Add shallots, parsley, Dijon mustard and vinegar to appropriate sized bowl. 
  • Very slowly drizzle in the olive oil while whisking the whole time. If you do this correctly, the dressing will emulsify and stay creamy and stabilized. If you don't do this correctly, and put too much oil in too fast the dressing will separate. It's possible you may need more or less oil so taste as you go, vinegar and lemon juice have different acidity points. 
  • Add salt and pepper to taste.

Variations: add parmesan, oregano and/or basil for a more Italian flavor. Experiment with different mustards and combo different mustard flavors - i.e. grainy or currant flavored mustard.
