Easy Stuffing

This is just a really simple stuffing recipe that I use for just about anything that needs stuffing. You can stuff a cornish hens, chicken breast, pork chops, roulades, etc... Certainly, you might find it easier to use a box stuffing mix. However, just like any other boxed food item, it's loaded with a lot of salt and who knows what else. Add some cornbread and sausage to this and it will be like Thanksgiving all year long! *Will stuff approximately 4 large chicken breast or 6 pork chops (4 Cups total)

Ingredients

  • 2-3 slices of bread, cut into 1 inch cubes
  • 1 celery stalk, very small dice
  • 1/4 Cup onion, very small dice
  • 2 Tablespoons butter
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Parsley, chopped fine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 Cup chicken stock (plus more as needed)
  • salt and pepper to taste

Procedure

  • Toast the bread crumbs
  • Heat a pan to medium heat. Add the Olive Oil and the butter until melted. Add the chopped celery and onion until just softened.
  • Add the thyme, sage and the parsley. Sauté for another 2 minutes. 
  • Toss the bread cubes, herb and onion mix, chicken stock, salt and pepper. You are looking to make sure that all the bread cubes are covered with the mix and slightly softened by the chicken stock. Add more chicken stock, salt and pepper to taste. 

Ready to stuff and cook!
