EASY Corned Beef and Cabbage

Yes, I use a pressure cooker - specifically a Ninja Foodi. I am not a  gadgets or trendy items kind of person. But, this particular kitchen item is so amazing that I can't help myself. If you don't have a pressure cooker, use your slow cooker. It will take about 8 hours to get the same result on LOW setting. Let me say this - Corned Beef and Cabbage is specifically an Irish American Dish and boy, do us Americans love it. Especially in March!

Ingredients

  • 1 lb carrots, peeled and cut into large chunks
  • 1 onion, cut into large chunks
  • 3 Cups water
  • 2 Tablespoons sugar
  • 2 Tablespoons cider vinegar
  • 3 cloves of garlic, rough chop
  • 1/2 teaspoon ground black pepper
  • 1 bay leaf, crumbled
  • 1 x 3 lb corned beef brisket with the spice packet, cut the brisket in 1/2
  • 1 small cabbage, cut into big wedges
  • 4 medium potatoes, peeled and cut into about 4 big pieces

Procedure

  • Mix the water, sugar, vinegar, garlic, pepper, bay leaf, and spice packet together in a small bowl. 
  • Add carrots and onion to the bottom of your pressure cooker insert
  • Place the corned beef on top.
  • Set on HIGH for 1 1/2 hours or alternatively in your slow cooker for 7 hours. 
  • Quick release, add the potatoes and cabbage. Set on HIGH again and cook for 15-20 minutes. Quick release. Alternatively with a slow cooker - add the potatoes and cabbage and cook for another hour. It's ready to slice and serve.
