I made this with Cube Steak because it just happened to be in my freezer and I'm trying to clear the freezer of my ridiculousness. I originally planned Chicken Fried Steak with it, but it's too hot in Northern Arizona right now to even consider heating up the kitchen with hot oil - I just couldn't face it. Consequently, I came up with this easy and most importantly cheap recipe that is as decadent as it sounds. Sometimes I have a recipe written down. This is one of those occasions where I made it up literally as I was recording the video for Instagram. I do hope you all enjoy it.
Ingredients:
- 4 Cube Steaks
- Salt and Pepper to taste
- Olive Oil as you need and like
- 1/2 Large Onion, sliced
- 8 oz Mushrooms (I used Baby Bella's), sliced
- 1 T. Butter
- 1/4 C. Sherry or Dry White Wine
- 1 1/2 C. Heavy Cream
- 1 T. Dijon Mustard
Procedure:
- Heat heavy sauté or cast iron pan to medium high heat.
- Season cube steaks with salt and pepper on both sides.
- Add olive oil to hot pan and add cube steaks. Cook for about 3 minutes on each side. You want that awesome caramelization on the steaks so they are beautifully browned and have the brown bits on the bottom of the pan for the rest of the dish to enjoy.
- Remove and reserve steaks and turn pan to medium.
- Add olive oil and sliced onions. Cook until soft and just caramelized. Remove and reserve.
- Add olive oil and sliced mushrooms. Add the 1 Tablespoon of butter and toss until cooked and slightly browned.
- Add the reserved sliced onions, toss in the pan with the onions.
- Add the sherry and cook just until "au sec" or almost dry. This won't take long so quickly add the heavy cream and the Dijon Mustard. Toss everything until thoroughly incorporated. Reduce until still creamy and the sauce coats the back of a spoon. Salt and pepper to taste. Et Voila, it's done!
I served this with lumpy homemade mashed potatoes (that's the way I like them) with lots of butter, sour cream, and milk. I also threw together a quick side of green beans tossed in olive oil, salt, pepper and granulated garlic.
