Breaded and Grilled Pork Chops

In the summer time I hate heating up the kitchen with the oven (I live in Arizona after all). That's all I should need to say in order to justify the reason why this most excellent and simple recipe is in my stash. Oh, by the way, these are the most moist and delicious pork chops you'll ever eat. End of story.

Ingredients:

  • 4 Cups fresh bread crumbs (do not even try to use that dried stuff from the store)
  • 2/3 Cup grated Parmesan
  • 1 teaspoon of your favorite all purpose seasoning or alternatively use 1 teaspoon kosher salt and 1/2 teaspoon pepper
  • 8 pork chops - use whatever cut you want. I trimmed and cut up my own from one of those huge, whole pork loins from Costco
  • 1/2 cup Olive Oil and 1/2 cup Canola Oil

Procedure:

  • Use a food processor and grind up your bread crumbs until they are crumbly and coarse. Not too fine. They stick better when they are not too finely ground up. I used all pieces of the bread and did not cut the crust off because that's just wasteful. Not to mention the crust gives a nice texture.
  • Stir the breadcrumbs with the Parmesan and seasonings in a dish or bowl made for dredging. Mix the Olive Oil and the Canola Oil in another dish or bowl made for dredging.
  • Dip each chop in oil and make sure the excess oil drips off. Then dredge them in the bread crumb mix. Press gently on the crumbs to make sure they stick to the meat.
  • Prepare grill for cooking over medium to hot charcoal or use medium heat for your gas grill. 
  • Spray your grill thoroughly and evenly with oil. Gently place chops on the grill. If you are using a gas grill, go ahead and put the cover down. Turn the chops over just once. The less handled the better. Your cook time should be 6-10 minutes total depending on the thickness of the chops. They should be golden and cooked through. 

I served mine with grilled asparagus and buttered noodles.
