It's a really simple recipe. Typically when you eat this in a restaurant it's made with frozen grated potatoes. Unfortunately, it is very labor intensive to peel and grate potatoes for the masses. Make these at home with REAL potatoes and you will taste a remarkable difference.
Ingredients:
- 2 large fully cooked and cooled baked Russet potatoes (Idaho Russets are drier and when they cool they stay firm)
- 2 Tablespoons butter
- 2 Tablespoons canola oil
- 1/8 teaspoon granulated garlic
- Salt and Pepper to taste
Procedure:
- Peel and grate the potatoes
- Heat pan to medium high, add cold oil to hot pan, spread the potatoes out. Mix around in the oil immediately. After that, DO NOT mess with them.
- Drop little pieces of the butter around the potatoes and let the butter pieces melt. DO NOT turn them.
- When the edges of the potatoes begin to turn golden, then you can turn them. Only turn once. Let them brown on the edges again.
- Sprinkle granulated garlic, salt and pepper to taste and they are done!
