Cream of Asparagus Soup

Otherwise known as Crème d'Asperges in French. It's luxurious, delicate and best of all - simple to make. Spring is Asparagus season, so make the most of it! Otherwise, I buy frozen asparagus from Trader Joe's. They are as close to the "fresh out of the garden" flavor that you can get all year round.

Ingredients:

  • 2 lbs fresh asparagus, cut into 1/2 inch pieces
  • 1 medium onion, chopped small dice
  • 3 Tablespoons butter
  • 1 Tablespoon Olive Oil
  • 5 Cups of Chicken or Vegetable Broth
  • 1/2 Cup heavy cream
  • 1/2 teaspoon lemon juice

Procedure:

  • Peel the bottom part of the asparagus to remove the tough outer layer. This is about 1-2 inches of the bottom only. 
  • Cut the asparagus spears into 1/2 inch pieces.
  • Chop the onion into a small dice. 
  • Heat soup pot to medium heat and add olive oil and then the butter. Melt butter and immediately add the onion. Stir until translucent. 
  • Add the asparagus spears and toss to coat with oil and butter. Cook for about 3 minutes or so.
  • Add the broth. Bring to a boil, turn the heat down to simmer and cover to cook for about 15 minutes. 
  • Test the asparagus - it should be mushy. If you have a hand blender, blend mixture until smooth. Alternatively, put mixture in a blender in batches - DO NOT put too much in blender or it will explode on you and you'll have a green kitchen. Just put in 1 - 2 cups at a time in blender. 
  • Add heavy cream and lemon juice. Salt and pepper to taste. 

*Garnish with parsley, cooked asparagus tips and/or a drizzle of Olive Oil.
